The rhizomes of turmeric are the primary source of the spice, which is renowned for its earthy, slightly bitter flavor and its potent anti-inflammatory and antioxidant properties.
Turmeric is a perennial herb that thrives in warm, humid climates with well-drained soil. It produces large, broad leaves and, when mature, the plant sends up a flower spike with pale yellow or white blossoms. The rhizomes are harvested, boiled, dried, and ground into the familiar yellow powder used in culinary dishes, particularly in Indian and Southeast Asian cuisine. Fresh turmeric can also be used in cooking and juicing.
