Chaya Spinach Fresh Leaves

Chaya, also known as Tree spinach or Mexican spinach, is a leafy green vegetable that is native to Mexico and Central America. With a slightly crisp texture, it offers a mild and slightly bitter flavor that is comparable to spinach or Swiss chard. It’s a nutritious and flavorful addition to any meal.

Always cook Chaya leaves. Do not eat uncooked leaves. Raw Chaya leaves contain hydrocyanic acid, a toxic substance that can make you sick. However, cooked leaves are safe to eat – in fact, once cooked Chaya is considered a superfood.

There are many ways to cook Chaya, such as steaming, boiling, sautéing, or stir-frying. Once cooked, Chaya can be used in a variety of dishes, such as soups, stews, and casseroles, or as a side dish to accompany your main course. Always cook Chaya leaves. Do not eat uncooked leaves.

Chaya is a highly nutritious vegetable that is rich in vitamins A, C, and K, as well as calcium, iron, and potassium. It also contains antioxidants and anti-inflammatory compounds

❄️ How to store

Chaya leaves should be stored in the refrigerator in a plastic bag or container with a damp paper towel to help preserve their freshness.

🍳 Chaya Omelette Recipe

A delicious and nutritious way to incorporate fresh ingredients into your breakfast or brunch.

🧂 Ingredients:
  • 2 teaspoons of Oil
  • 2 tablespoons of white Onion, finely chopped
  • 1/2 cup of Tomato, chopped
  • 1/3 cup of cooked and chopped Chaya*
  • 1-2 Habanero Peppers, finely chopped (depending on your desired level of spiciness)
  • 2 Eggs
  • Salt and Pepper to taste
  • 1-2 tablespoons of chopped Garlic Chives
  • 1-2 Green Plantains for chips.
📓 Instructions:
  1. Heat the oil in a non-stick frying pan over medium heat.
  2. Add the finely chopped onion and habanero peppers to the pan and cook for 1-2 minutes until the onion becomes translucent and the habanero peppers become fragrant.
  3. Add the chopped tomato and cook for 2-3 minutes until it becomes soft and releases its juices.
  4. Add the cooked and chopped Chaya and stir to combine.
  5. In a separate bowl, beat the Eggs until well mixed.
  6. Pour the beaten Eggs over the vegetables in the frying pan and stir gently to scramble the eggs with the vegetables.
  7. Cook the mixture for 2-3 minutes, stirring occasionally until the eggs are cooked through.
  8. Add salt to taste.
  9. Sprinkle the chopped garlic chives over the top of the eggs and vegetables.
  10. For a delicious and authentic meal serve the omelet hot with crispy fried Green Plantain chips and savor the flavors.

Note: Pre-cook the Chaya before adding it to the omelet mix, you can blanch it in boiling water for 3-5 minutes, drain it, and then chop it finely.

Want to Stay With Us?

The price to rent the cabin is $95 per night for up to 2 adults and 2 children. To confirm your booking you must pay a 50% deposit. If we have the availability we'll send you a link to pay your deposit.

Here are a few things to consider before you book your stay with us:

  • We are located in a rugged area, surrounded by rainforest and by the sea. Our farm is not ideal for very young children. If you wish to come with young children, they must be supervised by an adult at all times.

  • If you have any dietary restrictions, food allergies, or special diets please let us know below to make sure we can accommodate your needs.

  • We are located on Isla Solarte, on this island, there are no stores, bars, restaurants, or shops. If you need anything special during your stay be sure to bring it with you.

  • We recommend you bring: a headlight, bug repellent, and a good book in case of rain :-)

  • Some of the trails can get muddy during rainy days, we recommend you bring hiking shoes or boots if you want to walk on the trails and around the farm.

  • If you would like to enjoy the night scene, keep in mind we may not be a good fit due to our secluded location. Most bars and restaurants are located on the main island.

  • After booking we'll contact you to help you arrange transport to and from our place.

  • Check-in: 3pm-7pm

  • Check-out: before 11am

  • We cannot accommodate early check-in or late check-outs.

If your chosen dates are available we will send you a link to pay a deposit to secure your booking.
