Rainbow chard is a nutrient-dense vegetable that is low in calories and high in vitamins and minerals, including vitamin A, C, K, calcium, iron, magnesium, and potassium. It is also a good source of antioxidants, such as beta-carotene, lutein, and zeaxanthin, which can help protect against cell damage and reduce the risk of chronic diseases.

📓 Rainbow chard Frittata Recipe:
🧂Ingredients
  • 4 large eggs
  • 4 large egg whites
  • 1/4 cup grated Swiss Cheese
  • 1/2 bunch Rainbow Chard, 6 1/2 cups, washed well
  • 1 large white onion, sliced thin
  • 2 tsp whipped butter
  • Salt and fresh pepper, to taste
🥄 Instructions
  1. Preheat the oven to 375°F.
  2. Wash the rainbow chard thoroughly and remove the tough stems. Roughly chop the chard leaves into bite-sized pieces.
  3. Heat the olive oil in a large oven-proof skillet over medium heat. Add the onion and garlic and sauté until soft and translucent, about 5 minutes.
  4. Add the chopped chard leaves to the skillet and sauté until wilted, about 3-4 minutes. Season with salt and pepper to taste.
  5. In a separate bowl, whisk together the eggs, egg whites, grated Swiss cheese, and a pinch of salt and pepper.
  6. Pour the egg mixture into the skillet with the chard and onions, making sure that the eggs are evenly distributed.
  7. Cook the frittata over medium heat until the edges start to set, about 5 minutes. Transfer the skillet to the preheated oven and bake for 10-12 minutes or until the frittata is set and golden brown on top.
  8. Remove the skillet from the oven and let the frittata cool for a few minutes. Run a spatula around the edge of the skillet to loosen the frittata, and then slide it onto a serving plate.
  9. Slice the frittata into wedges and serve warm or at room temperature.

The price to rent the cabin is $95 per night for up to 2 adults and 2 children. To confirm your booking you must pay a 50% deposit. If we have the availability we'll send you a link to pay your deposit.
