📓 Garlic Chive and Egg Stir-Fry Recipe:

This garlic chive and egg stir-fry is a simple and delicious way to enjoy the unique flavor of garlic chives. The eggs add protein and texture, while the garlic chives bring a savory and slightly pungent taste. Feel free to adjust the seasoning and add other vegetables or proteins to the stir-fry as desired.

🧂 Ingredients:
  • 4 Eggs, beaten
  • 1/4 teaspoon Salt
  • 1/4 teaspoon ground Black Pepper
  • 2 tablespoons Oil
  • 1/2 cup Garlic Chives, cut into 2-inch pieces
  • 4-5 Collard Greens leaves, stems removed and sliced into thin ribbons
  • 1 Green Plantains, peeled and sliced into thin rounds
  • Salt, to taste
🥄 Instructions:
  1. Begin by heating 1 tablespoon of oil in a large skillet over medium-high heat. Add the sliced plantains and fry until they are golden brown and crispy, about 2-3 minutes per side. Remove the chips from the skillet and set them aside on a paper towel-lined plate.
  2. In a small bowl, whisk together the beaten eggs, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
  3. Using the same skillet, heat the remaining tablespoon of oil over medium-high heat. Add the sliced collard greens and sauté for 2-3 minutes until they are wilted.
  4. Next, add the garlic chives and sauté for an additional 1-2 minutes, until the chives are slightly softened.
  5. Pour the beaten egg mixture into the skillet with the collard greens and garlic chives. Cook for 2-3 minutes, stirring occasionally until the eggs are fully cooked and scrambled.
  6. Serve the stir-fry with the crispy plantain chips on the side.
