🥗 Arugula and Quinoa Salad with Pineapple Vinaigrette

To make a refreshing and tasty salad, start by cooking some quinoa and toasting some almonds. Once the quinoa is cooked, transfer it to a large mixing bowl and add in some Bele (or any other greens of your choice) and arugula. Toss everything together gently.

Next, make a simple pineapple vinaigrette and Drizzle it over the salad and toss everything together gently. Season with salt and pepper to taste.

Finally, add some diced pineapple and sliced red onion to the salad and fold everything together. Serve the salad immediately or chill it in the refrigerator until ready to serve. Enjoy!

🧂 Ingredients
  • 4 oz. quinoa, cooked and cooled to room temperature
  • ½ c. sliced almonds, toasted
  • 2 oz.baby Bele Spinach
  • 2 oz. arugula
  • salt and pepper
  • 6 pineapple rings, quartered
  • ¼ small red onion, sliced very thin
🍍 Pineapple Vinaigrette Dressing
  • ¼ c. crushed and blended pineapple
  • 2 T. honey
  • 2 T. Dijon mustard
  • 2 t. garlic chives, chopped small
  • ½ t. kosher salt
  • ¼ t. fresh ground pepper
  • ¼ c. white wine vinegar
  • 1 c. extra virgin olive oil

Place all ingredients in a jar and shake vigorously. Adjust salt and pepper as needed.
